Pineapple in Brown Sugar with Ice Cream – Martha Stewart Recipes


Serves 4

 

  • 1 tablespoon unsalted butter
  • 2 to 3 tablespoons dark brown sugar
  • 1 pineapple, peeled, cored, and cut into 1 1/4-inch cubes
  • 2 tablespoons rum (optional)
  • 1/2 vanilla bean, split and scraped, or 1 teaspoon vanilla extract
  • 1 pint vanilla ice cream
  • Directions

    1. Melt butter in a medium saute pan over low heat. Add sugar and stir until melted. Add pineapple, rum, if desired, and vanilla, and turn heat up to medium high.
    2. Cook, stirring, until liquid is reduced and pineapple is glazed, about 15 minutes. Be careful not to burn.
    3. Serve in bowls with a scoop of ice cream.

    tcm classic film festival 2011…

     

    The 2011 TCM Classic Film Festival Returns to Hollywood April 28 – May 1, 2011.

    Last year’s TCM Classic Film Festival was great! This year should prove to be just as much fun. The theme this year is ‘music and the movies’, kicking off with AN AMERICAN IN PARIS (1951). I would suggest buying a pass to the festival although I went without a pass last year and was able to purchase walk-up tickets. The walk-up tickets were sold just prior to the show at the box office. We had to wait for those with passes to enter first… I made sure to get in line early and only missed out on one movie that I really wanted to see because the theatre filled up.  A pass doesn’t guarantee a seat either, but you stand a better chance of getting in if you arrive early.

    Passes may be purchased  from TCM’s website. Passes may also be purchased by phone at 877.TCM.5764 from 10am to 6pm ET business days.

    There are four levels of passes:

    The Matinee ($299)

    • Access to all film programs starting prior to 6pm at all festival venues Friday, April 29-Sunday, May 1
    • Admission to Club TCM events and panels at the Hollywood Roosevelt Hotel until 6pm daily, Friday, April 29 – Sunday, May 1

    Oranges are in season…here is my new favorite cookie recipe …it has candied orange peel in it!

    Chocolate Orange Biscotti

    2-1/2 cups almonds, toasted

    12 oz. high-quality chocolate chips

    8 oz. unsalted butter, completely softened at room temperature

    4 large eggs

    1 cup packed light brown sugar

    1 cup granulated sugar

    2 tsp. pure vanilla extract

    1/2 tsp. almond extract

    2 Tb. instant espresso powder or finely ground coffee

    3/4 cup high-quality Dutch-processed cocoa powder, sifted

    1 cup candied orange peel

    18 oz. (4 cups) unbleached all-purpose flour

    1 tsp. baking powder

    alvin ailey…

    Get thee to the theatre this season to see Alvin Ailey! This year marks the 50th Anniversary of  “Revelations”, the company’s signature work. It is also Judith Jamison’s last season as Artistic Director. She has held the position since Alvin Ailey passed away in 1989 .  I’m looking forward to the new piece, “Anointed” which has a duet set to the music of  Moby’s “Grace”.

    The New York City Center Season runs through January 2, 2011.
